Tomato Ambrosia

I love this delightful dish that celebrates the rich flavors of ripe tomatoes, enhanced by the essence of olive oil. What is better than that? For those seeking a touch of warmth, optional red pepper flakes can be added to infuse the dish with a subtle kick. Each bite offers a delightful balance of savory, sweet, and slightly spicy notes, making it a perfect appetizer, especially paired with my Italian Chicken Wings with Yogurt Dipping Sauce and my Baked Brie.

Tomato Ambrosia

Serves 6-8
Prep time: 5 minutes
Cook time: 1 hour

1/3 cup (78 milliliters) olive oil
2.2 pounds (1 kilo) plum tomatoes, both ends cut off, halved
1 teaspoon (5 milliliters) salt
1 teaspoon (5 milliliters) pepper

Optional
1/2 teaspoon (2.5 milliliters) red pepper flakes

Directions

  1. Preheat oven to 350°F (176°C)

  2. Pour oil on a nonstick sheet pan just big enough to hold the tomatoes in a single layer. Sprinkle with salt, pepper, and chili flakes if using. Toss to coat. Roast in oven for one hour until tomatoes are jammy. Halfway through, use the back of a spatula to flatten the tomatoes and carefully flip them over. Remove from the oven and let cool for 10 minutes. Use your fingers to peel off the tomato skins and discard. At the same time, break the tomatoes into smaller pieces without mashing. Place them in a serving bowl with all the deliciousness at the bottom of the pan. Serve with a spoon, small plates, and focaccia or sliced baguette to sop up all the juices.
