Cucumber Martini
This is, by far, my favorite martini. Refreshing, not too sweet, and summery, it is perfect for mixing up a large batch and serving it for your next cocktail party. You can pre-mix and refrigerate it up to 4 hours in advance.
Here are some tips for juicing cucumbers! Choose fresh cucumbers, wash and trim, removing both ends. Peel the cucumber for a smoother juice. Cut the cucumber into chunks and place in a juicer, blender, or processor. I prefer using a mini-processor, which is a staple in my kitchen. Strain the juice through a fine-mesh sieve or cheesecloth. Now you're ready to make your martini!
Cucumber Martini
4-6 martinis, depending on glass size
¾ cup fresh cucumber juice (I peel my cucumbers before juicing)
¾ cup pineapple juice
½ cup St. Germain
½ cup simple syrup
½ cup lemon juice, fresh-squeezed
1½ cups vodka
lots of ice
Optional garnish
cucumber or lemon peel
Directions
Mix all ingredients in a pitcher.
Fill a martini shaker with ice and shake. Pour into chilled martini glasses. Serve and enjoy!
