Lamb Skewers with Olive Oil Mint Sauce

Lamb Skewers with Olive Oil Mint Sauce
Serves 6
Prep time: 30 minutes, plus 7 to 8 hours marinating
Grill time: 5 to 7 minutes, plus 5 minutes to rest
Lamb
Metal skewers
1½ pounds (680 grams) lamb loin, cut into 1½ inch (3.8 centimeters) cubes
Marinade
1/2 onion, chunked
3 cloves garlic, peeled
1/2 lemon, juiced
1 tablespoon (15 milliliters) Greek yogurt
1 tablespoon (15 milliliters) Dijon mustard
1 tablespoon (15 milliliters) olive oil
1/4 cup (60 milliliters) parsley
1 teaspoon (5 milliliters) salt
1 teaspoon (5 milliliters) pepper
Directions
Combine marinade ingredients in a mini-processor and pulse until onion is pureed. Place lamb and marinade in a zip lock bag, massage to distribute marinade, and refrigerate for 7 to 8 hours.
Prepare your grill by heating the broiler, or charcoal, electric, or wood-fired grill until very hot. Load skewers, leaving space between pieces so the fire can reach the core, while allowing some marinade to remain on the meat. Grill meat for 5 to 7 minutes over a hot fire, cooking until medium rare, turning skewers a few times. Remove from heat and let rest for 5 minutes before plating. Serve with mint sauce.
Mint Sauce
Makes ½ cup (125 milliliters)
Blend all ingredients in a mini-processor.
1/3 cup (79 milliliters) mint leaves, lightly packed1/4 cup (60 milliliters) parsley leaves, lightly packed
1 1/2 tablespoons (22.5 milliliters) fresh lemon juice
5 tablespoons (75 milliliters) extra virgin olive oil
1 tablespoon (15 milliliters) Greek yogurt
1/4 teaspoon (1 1/4 milliliters) Dijon mustard
salt and pepper to taste
