Cauliflower Tabbouleh Dressing

Here is a delicious, low-calorie salad dressing recipe for lunch or dinner salad.

Cauliflower Tabbouleh Dressing

1 clove garlic, finely minced
3 tablespoons lemon juice
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon sumac (can be omitted, but it adds flavor) 

  1. Make the dressing by combining all ingredients in a small bowl. It will be tart, but keep in mind that parsley negates the tartness.

  2. Place all salad ingredients in a bowl, toss with dressing, cover, and let sit at least half an hour so flavors meld.
