Niçoise Salad Dressing

A Niçoise salad dressing is a classic Provençal vinaigrette built on fruity extra virgin olive oil and sharp red wine vinegar or lemon juice. Dijon mustard addes subtle heat and tang, garlic provides pungent aromatics, and finely chopped fresh herbs contribute bright, grassy notes. The result is simple but vibrant, capturing the bold, sun-drenched flavors of the Mediterranean coast.

Niçoise Salad Dressing

Makes 1-3/4 cups 

1/3 cup champagne vinegar
1 tablespoon fresh lemon juice
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
1 tablespoon honey
1 dash Worcestershire sauce
2 tablespoons minced Italian parsley
1 teaspoon minced shallot 
1 cup olive oil

 Directions

  1. Place all ingredients in a bottle and shake to blend. Can be made up to four hours prior to using.

  2. Taste and adjust with salt and pepper or additional oil or vinegar.
